Oligosaccharides and glycoconjugates, a hugely diverse claOligosaccharides and glycoconjugates, a hugely diverse class of biomolecules, are closely associated with health and many diseases. Carbohydrate metabolism relies mainly on glycosidases and glycosyltransferases which are carbohydrate processing enzymes (CPEs) that break and create glycosidic bonds, respectively.
